Summer Sausage

Summer sausage is a dried or smoked sausage that can be kept without benefit of refrigeration.  It is usually a mixture of pork and other meat such as beef and venison.  Our seasoning mix include different types of sugar, mustard seeds, black pepper and garlic. Summer sausage can be either dried or smoked and is generally best kept and eaten cold, though it can be cooked.  This mix will produce 25 pounds of summer sausage.
